Just a short note that carries a HUGE thank you for your knowledge
and advice as a nutritionist and for your encouragement and support
of my goal. Learning from you how to fuel my body properly was the
KEY to my completing the AR50. I not only lost the weight I wanted
to lose - while eating lots of food (as you promised I would if I
followed your guidelines), but my body was handling long training
runs leading up to my race with quick recoveries. The day of the race
however was the ultimate proof – I not only finished the race
an hour faster than I had “secretly” wished, but enjoyed
the entire race and felt strong throughout! For 2 days I kept waiting
for muscle soreness and tiredness (like after marathons I had run)
but it never happened!! I went to work on Monday and the rest of the
week feeling fantastic!!! Thank you so much. I appreciate you working
with my schedule for our meetings and for taking into consideration

"Wow! What an awesome ride! I have no regrets and I owe it to a great
extent to Manuel's nutritional guidance and instruction. I recently
participated in the AIDS/Lifecycle Ride -- which is a 7 day, 585 mi
bicycle ride from San Francisco to Los Angeles. Before I knew Manuel,
I was not doing so hot on my training -- I was cramping up and hitting
walls on short rides. After I started working with Manuel, his advice
ensured that I not only finished strong, but, way ahead of the pack.
To put it in perspective, the one day I did not eat my carbs within
30 minutes after finishing 86 miles resulted in my extremely poor
performance the next day. Needless to say, I never did that again!

"I’ve pretty much always considered myself an athlete and
have been pretty happy with my weight. But I was always “battling”
with those last 10 lbs. If I happened to lose weight it was a shot
in the dark—I never really understood what I did to lose it.
But I definitely knew how to gain it back. As a competitive rower
I was shocked to discover that my body fat was 25%. I compete against
women who are in the 13-17% range. And what is more, those women always
beat me. It was not until I saw Manuel that I started to have an understanding
of food. I realized how unhealthy I had been eating, and really had
no clue about nutrition. I certainly knew about training, but not
the eating part. It was really radical for me to change my diet. Now
I feel like I know and understand food. The nicest part is that I
don’t have to exclude any foods like fad diets. I have learned
how to “budget” in everything from wine to chocolate.
And of course, I was able to loose the weight I wanted to loose, and
my body fat is now 20%. It is amazing to now have this new tool that
I can use for the rest of my life to keep my weight where I want it,
and to have a much, much healthier diet. What is more is that I am
rowing even better than ever, and I am beating the women I never thought
I could beat. Thanks Manuel!
And advice to the newcomer: This isn't a fad diet that excludes whole
food groups... This is a very sensible change. Be prepared to have
the way you look at food turned upside down..., and be prepared for
