Nutritionist Counseling and Dietitian

An experienced, registered dietitian in the State of California, Manuel Villacorta is a professional, passionate nutritionist dedicated to improving the quality of life for his clients in the San Francisco Bay Area. He has close to 12 years experience counseling a diverse population in a wide range of settings, from clinical to community service.

Specializing in organized, individualized nutrition programs, Manuel is a dynamic and compassionate nutrition coach who empowers each client to make appropriate diet, nutrient, and lifestyle changes that can result in a longer, healthier life. Before the 2004 launch of his successful private practice, MV Nutrition, Manuel worked as a public health nutritionist for the San Mateo County Public Health Department, with his primary focus on pediatric and prenatal nutrition, and as a clinical dietitian for Kaiser Permanente in San Francisco.

In addition to private counseling, Manuel has also given numerous public presentations on adult and gestational diabetes, weight control, cholesterol, cardiovascular disease, breastfeeding, infant and toddler nutrition, prenatal nutrition, sports nutrition, general nutrition, and stress management to
professional, collegiate, professional organizations, and community groups.

Considered one of the leading nutrition experts in the San Francisco Bay Area, Manuel is a compelling, charismatic communicator and public speaker, who is often praised for making audiences feel heard, motivated, and engaged. His warm, approachable style, along with his strong bilingual proficiency in both English and Spanish, have made him an in-demand expert for statewide television and radio appearances promoting health and nutrition. Along with the promotion of the California “Latino 5" a day program, Manuel also acts as spokesperson for Foster Farms’ health and nutrition campaign on television stations, such as Telemundo and Univision, and La Unica radio stations. His goal is to make complicated health messages more accessible and practical for the community.

Other corporate and non-profit organizations also rely on Manuel’s exceptional abilities. He is the spokesperson and/or representative nutritionist for Presidio Sports and Medicine, DiakadiBody, UnderstandHealth.com (a new consumer health website involving former ABC News Correspondent, Dr. Nancy Snyderman), Glide Memorial United Methodist Church (meal program for the homeless), and the San Francisco AIDS Marathon. In addition, he currently holds a summer session faculty position with the School of Nursing at the University of San Francisco.

 

Manuel received his Bachelor of Science degree from the University of California, Berkeley, in Nutrition and Physiology Metabolism. He also earned a Master of Science in Nutrition and Food Science from San Jose State University. Manuel has been the recipient of numerous prestigious awards for his research, including the Outstanding Master of Science Degree Award from San Jose State University’s Department of Nutrition and Food Science.
